Baked Oatmeal

During my hiatus from the blog I learned a lot. I learned that it's okay to take breaks. I learned to be patient (apparently they are right when they say, good things come to those who wait). I learned that I do a lot, and I mean a lot of DIY (that I never post!). And surprisingly, I learned that I am a pretty decent cook and baker, for that matter, in the kitchen.

So the other day, while doing what I do best, (that would be resting after a journey, and procrastinating from actually doing my own blog post), scanning Bloglovin' for inspiration, I came across 101 Cookbooks, an all natural food journal. Believe me when I say, you need to check this site out, because I know that I feel like I have hit the healthy recipe, Mecca!

Anyway, I came across this awesomely, delicious recipe, and I thought, "Hey. It's healthy. It's gluten free. It's pretty to look at. What's not to love?" Follow the link to this amazing foodie site, and scroll down to check out my finished product and find out where I bought my adorable kitchen finds!

Coconut Baked Oatmeal    *side note: I used blueberries instead of grapefruit* Oh yeah, and feel free to serve warm and with coconut milk...YUM!
